This Chocolate Ganache Recipe is made from chocolate and cream and can be used for icing, filling for pastries, and as a glaze. As a general rule:
- To make a glaze or coating: 1 part cream to 3 parts chocolate
- To make a truffle filling: 1 part cream to 2 parts chocolate
- To make a light filling: 1 part cream to 1 part chocolate
The butter can be added to give the chocolate ganache a shiny glaze.
